Pecan Pie Bread Pudding

Pecan Pie Bread Pudding

Ingredients

  • 8 Slices Martin’s Potato Bread, cubed (about 8 cups)

  • 2 Tablespoons Unsalted Butter, melted

  • 3 Large Eggs

  • 1 1/4 Cup Light Corn Syrup

  • 1/3 Cup Light Brown Sugar, packed

  • 1/4 Cup Granulated Sugar

  • 1 Teaspoon Vanilla Extract

  • 1 Teaspoon Cinnamon

  • 1/2 Teaspoon Salt

  • 1 Cup Pecans, chopped


Directions

  1. Line a 9×9 baking dish with parchment paper and spray well with non-stick cooking spray.

  2. Add cubed bread to baking dish; pour melted butter over top.

  3. In a large bowl, whisk together eggs, corn syrup, light brown sugar, granulated sugar, vanilla extract, cinnamon, and salt. Stir in the pecans.

  4. Pour mixture evenly over the bread pieces. Use a rubber spatula to mix around the bread cubes in the dish until evenly coated in the syrup mixture.

  5. Bake at 375º F for 45 minutes.

  6. Serve warm.
