Ingredients
8 Slices Martin’s Potato Bread, cubed (about 8 cups)
2 Tablespoons Unsalted Butter, melted
3 Large Eggs
1 1/4 Cup Light Corn Syrup
1/3 Cup Light Brown Sugar, packed
1/4 Cup Granulated Sugar
1 Teaspoon Vanilla Extract
1 Teaspoon Cinnamon
1/2 Teaspoon Salt
1 Cup Pecans, chopped
Directions
Line a 9×9 baking dish with parchment paper and spray well with non-stick cooking spray.
Add cubed bread to baking dish; pour melted butter over top.
In a large bowl, whisk together eggs, corn syrup, light brown sugar, granulated sugar, vanilla extract, cinnamon, and salt. Stir in the pecans.
Pour mixture evenly over the bread pieces. Use a rubber spatula to mix around the bread cubes in the dish until evenly coated in the syrup mixture.
Bake at 375º F for 45 minutes.
Serve warm.
