Ingredients
French Toast:
12 Slices Martin’s Maple Brown Sugar Swirl Potato Bread
3/4 Cup Whole Milk
3/4 Cup Heavy Cream
6 Large Eggs
3 Egg Yolks
2 Tablespoons Vanilla Extract
1 1/2 Cups Unsalted Butter
2 Cups Light Brown Sugar, packed
2/3 Cup Light Corn Syrup
1/2 Cup Maple Syrup
2 Cups Pecans, chopped
Pear Filling:
7 Pears, peeled and sliced
1/4 Cup Water
2 Teaspoons Fresh Lemon Juice
1 Cup Brown Sugar
1 Tablespoon Cinnamon
1 Teaspoon Nutmeg
3 Tablespoons Cornstarch
For Serving:
Whipped Cream (optional)
Directions
Preheat the oven to 350 degrees (F).
In a large bowl combine the milk, cream, eggs, yolks, and vanilla, beat well and set aside.
Arrange 12 slices of bread in two 9 x 13 casserole dishes. This should be six slices of bread in each dish.
Pour half the liquid mixture over the bread in one dish, and the other half of the liquid over the other dish. Cover each dish tightly with plastic wrap and refrigerate while making the pecan pie topping below.
In a small saucepan over medium heat melt the butter. Remove from heat and whisk in the brown sugar, corn syrup, maple syrup, and pecans.
Spread this mixture evenly across the bottom of another two 9x 13 casserole dishes. Carefully arrange six pieces of soaked bread on top of the mixture in each dish. Bake for 35 minutes.
While the French toast is baking, in a small saucepan combine sliced pears, water and juice of one lemon. Cover and cook over medium-high heat, stirring occasionally, for 8 minutes.
In a separate bowl, combine brown sugar, cornstarch, cinnamon, and nutmeg. Whisk to combine.
Pour over pears, and stir constantly until sauce thickens approximately two minutes. Remove from heat and let sit for five minutes.
Remove French toast from the oven. Cool for five minutes.
Take one of the casserole dishes and top each piece of French toast with pear filling. Place another piece of French toast (from the other dish) on top of each slice with filling so that they are now “stuffed.”
Remove each stuffed French toast from casserole dish, flipping over so the pecan mixture is on top. Serve with additional caramelized pear slices and/or whipped cream (optional). Enjoy!
